Amazing breakfast sandwich. That’s what I call this giant sandwich my son made for breakfast one Sunday morning. Oh yeah. My son cooks, too. Everyone in our house cooks, including my husband. We all enjoy cooking a little of this and a little of that. No one has a specialty. I think we all enjoy food too much to specialize in any one particular area.
We cook all kinds of food – soul food, Thai food, Chinese food, Italian food, Cajun food. You get the idea. And let me tell you. We have some fierce, but friendly competitions in the kitchen to determine who is the best cook in the house.
I would say one of our biggest contests involved cooking hamburgers. Who doesn’t love a big, thick, juicy burger every now and again? I know I do. My husband, son and I cooked three different burgers each at the same time. Can you imagine three cooks in the kitchen at the same time cooking on the same stove? You know it was something to see.
The burgers were judged on taste, appearance, and ease of preparing and cooking. Needless to say, when it was all said and done, we all claimed victory and kept it moving. Deep down we all knew every single burger was mouth-watering, amazingly good, which brings me to this amazing breakfast sandwich.
You see the size of this amazing breakfast sandwich? It looks to be at least six inches tall. I can’t attest to that with absolute certainty because I didn’t measure it. I should have, but unfortunately I didn’t.
But here’s one thing I know for sure. If you wake up famished, this amazing breakfast sandwich will satisfy your hunger and prepare you for your day. This sandwich is stacked with a mound of bacon, a fried egg, fresh spinach, and a blend of shredded cheddar cheese tucked between two butter buns toasted and spread with avocado oil mayo. Now that’s a breakfast sandwich. Try it with our delicious smooth creamy grits. These breakfast sandwiches are yummy, too.
8 PACK OF BUTTER HAMBURGER BUNS
3 LARGE EGGS
1 POUND OF BACON
1 BAG OF FRESH SPINACH
1 JAR OF AVOCADO OIL MAYO
1 BAG OF SHREDDED CHEDDAR CHEESE BLEND
TOAST 3 SETS OF BUTTER BUNS IN THE OVEN OR TOASTER
SPREAD AVOCADO OIL MAYO ON BUNS
ADD CHEDDAR CHEESE BLEND (AS MUCH OR AS LITTLE CHEESE AS YOU WANT) TO TOP BUN
FRY THREE EGGS, (DO NOT SCRAMBLE THEM)
ADD FOUR STRIPS OF BACON TO BOTTOM BUN
PLACE ONE FRIED EGG ON TOP OF BACON
PLACE SPINACH ON TOP OF FRIED EGG
ADD CHEDDAR CHEESE BUN
