Cheese nachos. I love, love, love cheese nachos. I like to top them with chicken, steak, ground beef and shrimp. 

I pile all kinds of ingredients on my cheese nachos, but for me the secret is the in the pinto beans. Oh my. Now you have my attention. The texture and taste of perfectly seasoned pinto beans adds incredible flavor to any kind of nachos.

Cheese nachos are great for parties, lunch and dinner. I serve them as appetizers, too. They are versatile and pair incredibly well with the ingredients used to make them.

Now when you start making your cheese nachos, don’t cheat and eat while you’re making your stack. Wait until you are done. Let the anticipation build up. Oh. It will be worth it with the first bite. I assure you.

1 pound of ground beef

1 small red pepper diced

1 small green pepper diced

1 bunch wild green onions sliced

1 small yellow onion diced

1/2 teaspoon course sea salt

1/2 teaspoon fine ground black pepper

2 small tomatoes diced

1 small jalapeño pepper sliced

1/2 cup of nacho cheese sauce (see recipe below)

1 cup shredded lettuce

1/3 cheddar cheese 

1 cup pinto beans

1 Tablespoon sour cream

1 bag tortilla chips


Cook ground beef in skillet

Add red pepper, green pepper, yellow onion, sea salt, black pepper and jalapeño pepper

Spread tortilla chips on serving platter

Top with ground beef mixture

Add shredded lettuce

Add 1 cup of pinto beans

Add 1/2 cup of nacho cheese sauce (Or more if you like)

Add diced tomatoes

Add wild onions

Add sour cream

Sprinkle with shredded cheddar cheese
