There is nothing like a fresh spinach and strawberry salad, especially on a sunshiny spring day. Fruits and vegetables are the perfect mix of awesome goodness. When it comes to salads, they are the absolute best. In my opinion, fresh spinach and strawberry salad can’t be beat. The first time I tried one was a few years ago at a casual restaurant with a solid reputation for its breakfast and lunch menu. I have been eating them ever since.
Another great thing about fresh spinach and strawberry salad is it is versatile. You can add dozens of other ingredients to it, like nuts. Crushed walnuts, pecans and Brazil nuts delivers crunch and flavor, plus they are packed with nutrition. The dressing you choose makes a big difference, too. I discovered topping the salad with a simple strawberry or raspberry balsamic vinaigrette dressing adds a burst of flavor and complements the ingredients well.

2 CUPS OF FRESH SPINACH
1 CUP FRESH STRAWBERRY SLICES
1/2 CUP OF CRUSHED PECANS
1/4 CUP HONEY FLAVORED GOAT CHEESE
DRESSING
INGREDIENTS
1 CUP FRESH RASPBERRIES
1/2 CUP RED WINE VINEGAR
1/4 CUP EXTRA VIRGIN OLIVE OIL
1 TABLESPOON LEMON JUICE
1 TABLESPOON LIME JUICE
MIX IN BLENDER ON HIGH ONE MINUTE
