Homemade banana bread is a comfort food that tickles your taste buds and warms your soul like a wollen blanket bite after delicious bite.
When I was growing up, my mother made banana pudding, banana cream pie and banana bread. It was like being in banana heaven. Sometimes my mother served her homemade banana bread as a dessert. Other times she served it for breakfast. It didn’t matter to me when my mom served her homemade banana bread. It was delicious each and every time.
While I enjoy banana bread and banana pudding, banana bread was my favorite and it still is to this day. There is something about whipping up the ingredients to make banana bread, putting the mixture in the oven and then waiting for that amazingly sweet aroma to float through the house and cling to the air.
And oh the anticipation. I couldn’t wait to grab a tall, cold, glass of milk or a couple scoops of vanilla ice cream to enjoy with my banana bread fresh out of the oven.

3 BANANAS (VERY RIPE IS BEST)
2 CUPS OF ALL PURPOSE FLOUR
1/3 CUP OF BROWN SUGAR
1/2 CUP SUGAR
1/4 CUP MELTED BUTTER
1 TABLESPOON VANILLA EXTRACT
1 LARGE EGG
COOKING SPRAY (OR OIL TO COAT THE PAN)
PREHEAT OVEN 350 DEGREES
MASH BANANAS WITH A FORK IN A LARGE BOWL
ADD BROWN SUGAR
ADD WHITE SUGAR
ADD 1 CUP OF FLOUR
ADD 2ND CUP OF FLOUR
DO NOT MIX THE BATTER LONG, JUST ENOUGH TO FOLD IN THE FLOUR
SPRAY PAN WITH OIL (YOU CAN DUST THE PAN WITH FLOUR, TOO TO PREVENT THE BREAD FROM STICKING TO IT.)
POUR BATTER INTO PAN
BAKE ON 350 DEGREES FOR AN HOUR. (COULD BE SLIGHT MORE OR LESS DEPENDING ON YOUR OVEN)
