Pancakes are one of my favorite foods. I can eat them for breakfast, lunch and dinner every day of the week and never tire of them. I love their texture and taste. I like them fluffy or flat topped with just about everything – fruit, whipped cream, nuts, eggs, bacon, sausage. You get the idea. When I was looking for a new way to serve one of my old favorite recipes a few years ago around Mother’s Day, it occurred to me to try my heart shaped cookie cutters and low and behold they worked like magic.
The heart shaped pancakes were a hit with my mom. Her lips curled into a wide smile when she saw them. They really touched her heart and filled her stomach. INGREDIENTS
1 LARGE EGG
1 CUP OF SUGAR
2 TABLESPOONS VANILLA EXTRACT
1 TABLESPOON OF CINNAMON
2 CUPS OF MILK
2 1/4 CUPS ALL PURPOSE FLOUR
DIRECTIONS
POUR FLOUR INTO LARGE BOWL
ADD MILK, EGGS, SUGAR, VANILLA AND CINNAMON
MIX UNTIL BATTER POURS EASILY
SPRAY NONSTICK SKILLET OR GRIDDLE WITH COOKING OIL
HEAT SKILLET OR GRIDDLE ON MEDIUM HEAT (NOT HIGH)
POUR ABOUT A 1/3 CUP OF BATTER PER PANCAKE INTO SKILLET OR ON GRILL
WAIT UNTIL BUBBLES APPEAR AND THE EDGE IS GOLDEN BROWN THEN FLIP THE PANCAKE
COOK OTHER SIDE UNTIL GOLDEN BROWN
REMOVE FROM HEAT
