This nacho cheese sauce can be used with all kinds of nachos – beef, chicken, shrimp, steak. I like ’em all. One of the best things about this nacho cheese sauce recipe is it is versatile. That, coupled with the fact that it is also delicious.

You can serve our nacho cheese sauce with tortilla chips for a mid afternoon or evening snack or add some pinto beans  and diced tomatoes and create an appetizer.

If you go all out, in addition to tomatoes and pinto beans, add some sour cream, creamed avocado, chicken, beef, shrimp or steak, corn, shredded lettuce, wild onions, jalapeño and tortilla chips and you will have a filling dinner. 

There are so many different brands of  tortilla chips on the market that will go well with our nacho cheese sauce. Some are made with corn. Others are made with flour.

Tortilla chips come in a variety of shapes and sizes and colors, too – red, green, blue and yellow. They are made restaurant style or homestyle. Who knew there were so many different kinds of tortilla chips available?

It doesn’t matter whether you have red tortilla chips or blue tortilla chips or flour tortilla chips or corn tortilla chips, restaurant style tortilla chips or homestyle tortilla chips our nacho cheese sauce complements them all, and it is a quick, easy and tasty recipe. 2 Tablespoons of Butter

3 Tablespoon Extra Virgin Olive Oil

1  Cup Shredded Cheddar Cheese (mild)

1/2 Cup Monterey Jack Cheese

2 Tablespoons All Purpose Flour

1 cup Whole Milk

1/4 Teaspoon Sea Salt

1/2 Teaspoon Red Pepper Flakes

2 Stalks of Wild Onions (Sliced)

1/3 cup Red Bell Pepper (Diced Very Small)

1/3 cup Green Bell Pepper (Diced Very Small)

1 Tablespoon Chopped Cilantro Leaves


Add Olive Oil To Large Skillet

Add Butter

Add Red Bell Pepper

Add Green Bell Pepper 

Add Flour and Whisk

Add Milk slowly

Continue to whisk 

Add Cheddar Cheese and Monterey Cheese. Continue to whisk until creamy.

Add Sea Salt 

Sprinkle with Red Pepper Flakes

Top with sliced, wild green onions


NOTE: Nacho cheese sauce can be used with tacos, pinto beans, black beans, refried beans, macaroni, enchiladas, French fries, chili and a whole lot more!
