Oven roasted sweet potatoes are perfect whether you are on a healthy diet watching your weight and what you eat or not. Research shows, they are loaded with potassium, vitamins, and fiber. And they taste delicious no matter how you cook or slice them. In my opinion, it doesn’t get much better than that.
I enjoy cooking sweet potatoes a variety of ways. Perhaps, their versatility speaks volumes about why I like them so much. That coupled with their incredibly delicious taste, of course.
I have served grilled sweet potatoes, mashed sweet potatoes, fried sweet potatoes, boiled sweet potatoes, and oven baked sweet potatoes. They are one of my favorite starchy roots that I root for all the time touting their goodness and how super easy they are to cook.
I discovered years ago, that if you slice sweet potatoes before you roast them in the oven, they cook much faster than baking them whole, which can take about an hour and a half or more depending on the size of the sweet potatoes.
When I don’t have a lot of time to spare, but crave mouth-watering sweet potatoes, I make oven roasted sweet potatoes. They cook in about thirty minutes and you can serve them for breakfast, lunch, and dinner.
There isn’t much to the process at all. I wash my sweet potatoes, pat them dry and slice them. As far as seasoning goes, I don’t add much at all, just a dash of sea salt and a dash of paprika. I definitely do not add any sugar, not even a pinch. There is a simple reason sweet potatoes are called sweet potatoes. Their sweetness is prevalent when you cook them and there is no denying their distinctive flavor.
After I slice my sweet potatoes, I put the in a bowl, drizzle some extra virgin olive oil on them and toss them to make sure they are covered, add sea salt and paprika, and toss them into the oven. That’s it. Really.
Add this oven roasted sweet potatoes recipe to any entree – fish, poultry or beef or to any side. It is a perfect addition to your meal and it is healthy, too. You can’t go wrong with a side that tastes good and is good for you.
2 LARGE SWEET POTATOES
1/4 CUP OF EXTRA VIRGIN OLIVE OIL
1/4 TEASPOON SEA SALT
1 TEASPOON PAPRIKA
PREHEAT OVEN TO 375 DEGREES
WASH AND PAT DRY SWEET POTATOES
SLICE SWEET POTATOES
DRIZZLE WITH OLIVE OIL
SPRINKLE WITH SEA SALT AND PAPRIKA
SPREAD SWEET POTATO SLICES ON BAKING SHEET
BAKE FOR 15-20 MINUTES ( LONGER DEPENDING ON HOW THICK YOUR SLICES ARE)
NOTE: USE A TOOTHPICK TO INSERT INTO YOUR SWEET POTATO SLICES TO DETERMINE HOW SOFT AND TENDER THEY ARE.
