Roasted potatoes are incredibly delicious and super easy to make. When a cookie cutter is used to cut the potatoes into amazing heart shapes before they are popped into the oven, that takes them to a whole new level.
Heart shaped oven roasted potatoes turn a simple meal into a classy affair. It doesn’t matter whether they are served as a side dish with meat, fish or poultry, served with a romantic dinner amid burning candles with Pinot Grigio or Cabernet Sauvignon or served as an appetizer with bacon bits, green onions, and cheddar cheese. One thing is certain, heart shaped oven roasted potatoes will add a touch of elegance that will not disappoint.
There are several different kinds of potatoes, including russet, white, yellow, red, and purple. They are all perfect candidates for oven roasted potato hearts with or without their skin. As I mentioned, oven roasted potatoes are easy to cook, too.
Once you press a heart shaped cookie cutter through the potato slices. Place them in a bowl, drizzle extra virgin olive oil over them and mix very well. Sprinkle the potato hearts with course sea salt and black pepper. Spread them on a non-stick cookie sheet or a pan covered with aluminum foil one heart at a time. Spread them out an inch or two a part before popping them into your oven preheated at 375 degrees.
It does not take a long time to cook oven roasted potato hearts. They can be peeled, cut into hearts, popped in the oven and ready to serve within thirty to forty minutes.

COURSE SEA SALT
2 STALKS GREEN ONIONS
1/2 CUP CHEDDAR CHEESE
1/4 CUP BACON BITS
HEART SHAPED COOKIE CUTTER
PREHEAT OVEN 375 DEGREES
CUT POTATOES INTO HEARTS
DRIZZLE POTATOES WITH OLIVE OIL
SPRINKLE WITH SEA SALT AND BLACK PEPPER
SPREAD HEARTS ON COOKIE SHEET OR PAN COVERED WITH ALUMINUM FOIL
BAKE IN OVER 12-15 MINUTES ON 375 DEGREES
SLICE GREEN ONIONS
TOP HEARTS WITH CHEDDAR CHEESE, GREEN ONION SLICES, AND BACON BITS
