Once you press a heart shaped cookie cutter through the potato slices. Place them in a bowl, drizzle extra virgin olive oil over them and mix very well. Sprinkle the potato hearts with course sea salt and black pepper. Spread them on a non-stick cookie sheet or a pan covered with aluminum foil one heart at a time. Spread them out an inch or two a part before popping them into your oven preheated at 375 degrees.
It does not take a long time to cook oven roasted potato hearts. They can be peeled, cut into hearts, popped in the oven and ready to serve within thirty to forty minutes.
