Who doesn’t love a simple yet sensational salad? I am a big fan of salads. Fruit salad. Tortellini salad. Vegetable salad. Egg salad. Taco salad. The list goes on and on. I love the fact that salads, for the most part, are quick and easy to make. When it comes to vegetable salad, I add just about any ingredient I want and the salad turns out great. Sometimes, I make a veggie salad with romaine lettuce, grape tomatoes, red onions, radish, butternut squash and mushrooms. Other times, I use iceberg lettuce, spinach, cucumbers, corn, carrots, purple cabbage and sliced boiled eggs.

These are simple yet sensational salads that are nutritious and so good. Depending on how hungry you are, a simple yet sensational salad can be a meal, if topped with fish or chicken or it can be served before a meal or as a side to complement a meal. It is really up to you and how you want to serve a simple yet sensational salad. Don’t be afraid to play around with ingredients. Select fresh, crisp greens to start then build from there adding tomatoes, cucumbers, boiled eggs, carrots, black olives, mushrooms whatever your heart desires.

Another great thing about salads is they can be eaten any time of day. I enjoy a fresh fruit salad for breakfast, a fresh crisp vegetable salad for lunch or dinner. Add chicken, fish or meat to your salad and you have a meal. See tossed salad and balsamic vinegar dressing recipes below. 

TOSSED SALAD

INGREDIENTS

8 OUNCES ICEBERG LETTUCE

4 OUNCES ROMAINE LETTUCE

1 CUP GRAPE TOMATO SLICES

1/2 CUP CUCUMBER SLICES

1/2 CUP OF MUSHROOMS

1/2 CUP THINLY SLICED CARROTS

1/2 CUP SUNFLOWER SEEDS

BALSAMIC VINEGAR DRESSING

INGREDIENTS

3 TABLESPOONS BALSAMIC VINEGAR

1/2 CUP EXTRA VIRGIN OLIVE OIL

2 TABLESPOONS HONEY

1 TEASPOON HONEY MUSTARD

MIX WELL

ADD GROUND BLACK PEPPER, SEA SALT, RED PEPPER FLAKES TO TASTE

ENJOY!

NOTE: Add fish, chicken, shrimp or ham to salad.
