Well, maybe not quite as hard, but they were hard nonetheless. The best grits I have ever eaten were cooked by my grandmother. She had a way of making smooth creamy grits that seemed to melt in your mouth. They were as soft and as tasty as can be. When served with bacon, eggs and homemade biscuits, those smooth creamy grits were like a slice of heaven on my plate. I never heard anyone ask, Tired of Lumpy Grits? when referring to my grandma’s grits.

My grandmother cooked smooth creamy grits for breakfast, lunch and dinner. She piled all kinds of food on top to give them a different twist. Have you ever eaten grits topped with a blend of different cheeses, crispy fried catfish, sautéed scallops or scrambled eggs? I have. I can attest that is good eating for sure.

There’s a funny thing about grits. They are easy to make, yet sometimes they just don’t turn out quite right. I discovered you don’t have to do anything fancy to cook smooth creamy grits or add a lot of ingredients to make them taste good. INGREDIENTS

1/4 CUP OF GRITS

ONE CUP WATER

DIRECTIONS

POUR CUP OF WATER INTO A SMALL SAUCEPAN

BRING WATER TO A BOIL

ADD GRITS

STIR GRITS CONSTANTLY

REDUCE HEAT TO SIMMER

COVER POT WITH LID

COOK GRITS FIVE MINUTES

REMOVE FROM HEAT

ENJOY!

NOTE: You can add all kinds of ingredients to grits to make them even more delicious.

ADD EXTRA VIRGIN OLIVE OIL

ADD SALT

ADD PEPPER

ADD SUGAR

ADD SHREDDED CHEESE

ADD SCRAMBLED EGGS

ADD COOKED ONIONS

ADD CATFISH NUGGETS

ADD CHICKEN NUGGETS

ADD SCALLOPS
