Spaghetti squash! I must admit I had never heard of spaghetti squash until a few years ago. I was relaxing on my couch in the den of my home, with my television remote in hand channel surfing, trying to find something entertaining to watch. Low and behold, I stumbled across a cooking show. The star of the program, a popular chef was showing viewers how to roast spaghetti squash in the oven, not vegan spaghetti squash or chicken spaghetti squash, but rather plain spaghetti squash. 

I decided to watch the show. Being a huge fan of pasta, I was intrigued. I was fascinated when I discovered spaghetti squash isn’t pasta at all, but rather a vegetable. Really! Who knew! The chef knew. I had no clue.

The chef made it look super easy to roast the veggie in the oven. Believe me when I tell you I am all about recipes that are super easy. I was intrigued when the chef used three ingredients to roast the spaghetti squash – olive oil, salt, and black pepper. I couldn’t wait to try the recipe.

I jumped off my couch and into my car then headed straight to the grocery store. To say I was excited would be a gross understatement. I was thrilled. There is something about trying a new recipe that gets my adrenaline pumping and puts me in a fantastic mood. 

I charted a path straight to the produce section where I spied rows and rows of Granny Smith apples, Bartlett pears, red potatoes, yellow onions, collard greens, broccoli, cauliflower, and other fruits and vegetables before I finally found the spaghetti squash nestled near mounds of acorn and butternut squash. 

For a second, and only a second, I considered buying two because I knew without a doubt that I would love them. I mean after all, I love pasta. Surely, spaghetti squash would taste like spaghetti – right?

The ingredients and instructions the chef shared on television were committed to my memory. Alexa was playing easy listening jazz music as I followed the simple guidelines step by step. After roasting the spaghetti squash, I removed it from the oven and couldn’t wait to try it.

The spaghetti squash was beautiful,  bright yellow in color, and tender, but it didn’t have much flavor. Truth be told, it was bland and needed to be spiced up. I knew exactly what to do. 

I added some of my favorite ingredients that I serve over spaghetti and created a mouthwatering, tasty, and delicious dish. I even added some fresh steamed broccoli  and oven roasted sweet potatoes on the side to complement my meal.

Believe me when I tell you my spicy, Italian sausage with shrimp, oven roasted spaghetti squash is amazing. Well, don’t take my word for it. Try the recipe for yourself with or without the fresh steamed broccoli and oven roasted sweet potatoes. You will be glad you did.

INGREDIENTS

1 LARGE SPAGHETTI SQUASH

1 POUND SWEET ITALIAN SAUSAGE

12 LARGE SHRIMP, COOKED, DEVEINED, AND TAIL OFF

1 CUP EXTRA VIRGIN OLIVE OIL

1/2 CUP FRESH SHREDDED PARMESAN CHEESE

1 TEASPOON RED PEPPER FLAKES

1 CUP SUN DRIED TOMATOES

1 CUP DICED YELLOW ONIONS

1 TEASPOON COURSE SEA SALT

1 TEASPOON BLACK PEPPER

1 GARLIC CLOVE CHOPPED

ALUMINUM FOIL

BAKING SHEET

INSTRUCTIONS

PREHEAT OVEN 425 DEGREES

WASH SPAGHETTI SQUASH IN COLD WATER, SLICE IN HALF, AND REMOVE SEEDS

DRIZZLE EXTRA VIRGIN OLIVE OIL ALL OVER THE SPAGHETTI SQUASH

WRAP SPAGHETTI SQUASH IN ALUMINUM FOIL, PLACE FLESH SIDE DOWN ON BAKING SHEET, AND ROAST IN OVEN ABOUT 40  MINUTES OR UNTIL TENDER

ADD ITALIAN SAUSAGE, DICED ONIONS, AND CHOPPED GARLIC CLOVE TO SKILLET. COOK ON MEDIUM HEAT UNTIL SAUSAGE IS DONE.

DRAIN GREASE

MOVE ITALIAN SAUSAGE TO THE SIDE OF THE SKILLET, ADD SHRIMP, AND COOK ON MEDIUM HEAT UNTIL DONE (ABOUT 3 MINUTES)

ADD SUN DRIED TOMATOES, BLACK PEPPER, AND SEA SALT THEN STIR AND COVER WITH LID. REMOVE FROM HEAT. LET STAND ABOUT FIVE MINUTES.

USE A FORK TO SCRAPE SPAGHETTI SQUASH FROM ITS SHELL AND ONTO A SERVING PLATTER, ADD SHRIMP AND SAUSAGE, SPRINKLE  WITH RED PEPPER FLAKES THEN TOP WITH FRESH, SHREDDED, PARMESAN CHEESE.
